Moong Dal Dosa

I have been following Swathi's Indian Healthy Recipes for quiet a few months now and I absolutely love her blog, she not only posts healthy recipes but also have step by step instructions that helps you follow her footsteps :)

Thank you Swasthi for sharing all of your wonderful recipes!! Do check out her blog, you will love it!!

Here is my take on the Moong Dal Dosa - you can find the original recipe here.

I had to change couple of things - I didn't had whole moong available so I used yellow split moong dal instead; and I skipped the sauteed onion part since I like to have my dosas with either sweet yogurt or tomato-garlic chutney. I was great, dear hubby loved it and it ended being a perfect breakfast for Sunday morning. You must try this recipe!! It's out of this world!! Specially if you are a dosa lovers like me :)

Mini Bread Pakora with a Twist & Award

And we twist, we twist, we twist
And we twist, we twist, we twist
(Song from Love Aaj Kal)...

Well first of all, sorry for being away for a while from the blogging world... this time round I have a pretty good reason for it. Last weekend I was trying to see how well I multi-task, so I was on the phone with my mother in law, washing potatoes on one side, and frying kheema (ground goat meat) on the other. Not a good idea to do when you MIL is giving you good tips on what to do for Eid, while you are working with hot water and hot OIL... guess what, as soon as I dropped the kheema in the wok where I had oil heating up.. all the oil splashed up to my hand, burning my right hand wrist...

I felt the hot and burning sensation throughout my hand, quickly lowered the flame and mistakenly put my hand under HOT water... Ouch!!! Now keep in mind all this while I was on the phone with MIL so I wanted to make sure that she doesn't know about it... so you can't technically scream... :). Quickly turned the water into cold and let it ran through my hand, and in two minutes or so I went back to cooking. All this time I was thinking well the oil can't be that hot, 'cause I had just turned on the stove.. but boy I was wrong. For next hour or so, I continued on working/cooking/cleaning and took a shower. After the shower my wrist was all red and burning so bad... Dear Hubby, being a Doctor he is, got super mad at me for not paying attention. I go, "it's not that bad, it will heal soon".. and he goes, "Yeah, but it's your right hand, and you won't be able to cook or work for next seven days!!!"... Uh-O... The burn is about two inches long and one and half inch wide... Now everyone who sees it, asks me what happened and I tell them the entire story, and they are like, "How can you not know that it burned that bad"... Hey I just didn't okay.. this is my first burn ever, how am I suppose to know?!?!?!?"

So, anyways, it hasn't healed yet but Hubby does the dressing twice a day so I am able to work and cook.. thank God for him being a doctor... :) (only in times like this :) )

Coming back to the recipe, I made this prior to the burning incident. It came out so good and everyone loved it. You can see my regular bread pakora recipe here.

Ingredients:
  1. Two medium potatoes - peeled, cubed, and boiled.
  2. A bunch of fresh coriander leaves
  3. Two-three green chilies - finely chopped.
  4. 1/4 tsp Turmeric Powder
  5. One tblsp lemon juice
  6. Salt per taste
  7. For tempering - half tblsp cumin seeds, half tblsp mustard seeds, and two tblsp oil.
  8. For Batter - Half cup chickpea flour, 1/2 tblsp red chili powder, 1/2 tblsp dhaniya powder, a pinch of turmeric powder, salt per taste, half tsp lime juice and Half cup warm water.
  9. Six breads - cut diagonally in both directions making four pieces out of one bread.
  10. Oil for deep frying
  11. Here is the twist - Yellow American Cheese Slices - Cut diagonally in both directions and horizontally from the middle - this should give you eight mini triangles from one slice.

Process:
  1. Mash boiled potatoes, add in coriander leaves, lemon juice, green chilies, salt and turmeric powder. Mix well, add a little bit of water (only if needed).
  2. Heat oil for tempering, add in cumin and mustard seeds, let it splutter, then sprinkle over potato mixture and mix well. Keep aside.
  3. The potato mixture should look like this filing that I had previously made for Aloo Paratha.

  4. Mix all ingredients for batter - make sure there are no lumps of chickpea flour and the batter should be more towards the thicker side. Adjust water quantity as needed. Lime juice is key to this batter, what it does is when you fry the pakoras it doesn't let it absorb so much oil.

  5. Spread some potato mixture on the one of the diagonally cut bread, place the second bread on top, place cheese slice, and press tightly. Repeat the process for rest of the breads.

  6. Heat oil for frying.
  7. Dip the potato filled breads into the batter and deep fry till golden brown. Repeat for the rest of the sandwiches.Serve hot with some tomato ketchup.

Moli De Parathe

Merry Christmas Everyone!!! Hope everyone had a wonderful Christmas…

Moli de Parathe. I have never tried these parathas before, but dear hubby loves Moli. He likes to eat it with Pulao or Sabzi Roti that I normally make as an everyday food. He also likes Moli ki Bhaji. I haven’t developed a taste bud for the bhaji yet but he loves it. Back home the Moli that we get are so tiny, but here they are all processed and hybrid, as a result they are giant Molis. Given that I am not a fan of Moli and dear hubby can only eat so much of it, I had a whole bunch of it left and I had no idea what to do with it.

One Sunday morning, I was fasting, so I made these parathas for dear hubby, and he loved it. So I thought of sharing the recipe with you. It is simple, easy, and healthy!

Ingredients:
1. Two cups Moli – finely chopped
2. Three cups wheat flour (atta)
3. Three to four green chilies – finely chopped
4. Three tblsp oil
5. One cup warm water
6. One tblsp cumin seeds – crushed
7. Salt per taste.

Process:
1. Mix together all the ingredients above and make soft dough.
2. Let it sit for five minutes. Divide the mixture into five golf size balls.
3. With the help of rolling pin, roll the balls into parathas.
4. Cook both sides on a frying pan with little oil.
5. Once cooked on both sides, remove on a serving dish and put a dollop of ghee.
6. Serve hot with cold sweet yogurt.

ENJOY!!!

Masala Dosa

Masala Dosa – Oh Gosh! You have no idea how many memories are attached with this particular dish. My fast friend in my school in India was South Indian, her lunch would always have different kinds of dosas and my lunch would be the same roti with various curries. We always used to switch our lunches as I loved her dosas and she loved my rotis. :). Oh those good old days!

Also, being from Gujarat, this dish was a luxurious meal for us. Every time we go out to eat, Masala Dosa would be the only thing I would order just like my other cousins. Keep in mind, that in 1990s Indian-Chinese was still unheard of and people normally just cooked food at home rather than go out to eat because whatever you find at restaurants over there you could easily cook at home. With an exception to masala dosa, hence this became a luxurious meal for us. Mom used to make masala dosas in summer vacation time every year and that day would be like Eid for us! I can go on and on about my love for masala dosas but I think I should stop here and focus on the recipe since it’s quite lengthy.

But, before I jump on to the recipe, I want to give you some briefs about dosas. Dosas are fermented crepes made from rice and urad dal. Its origination is from South India but is very well known all around India. It is available in almost all Indian Restaurants in United States.

Ingredients:

For Batter:
  • Three cups uncooked rice
  • Two cups urad dal (split and husked black gram)
  • 1 tsp fenugreek seeds
  • Salt to taste
For the potato filling:
  • Three medium potatoes, boiled and cut into 1 cm cubes
  • One large onion, thinly sliced
  • Half cup green peas
  • Half tomato, chopped
  • 3-4 large, hot green chillies, slit in half
  • 2 tsp mustard seeds
  • 1 tblsp ginger, minced
  • 1 tblsp lemon juice
  • salt per taste
  • 3-4 curry leaves
  • 1 tsp turmeric
  • 2 tblsp cooking oil
  • Handful of chopped coriander
For the coconut and coriander chutney:
  • 5 large hot green chillies
  • 1 small clove garlic
  • 1 tsp ginger
  • A bunch of coriander, including stalks
  • 5 tblsp desiccated coconut
  • 1 tbsp cooking oil
  • 2 tblsp lemon juice
  • Salt per taste
  • 3 tblsp sugar
Process:

For the potato filling:

1. Heat the oil in a large pan and add the mustard seeds. Wait for them to pop, and then add the curry leaves, onions, chilies, turmeric and ginger.
2. Allow to cook on a low heat for 5 minutes. Add the salt, sugar, lemon, tomato, peas and potatoes. Mix well.
3. Let it cook for about 5-10 minutes, stirring in between.
4. Once done, garnish with chopped coriander and mix well.

For the coriander chutney:

1. Blend together all ingredients using a food processor.

For the batter:

1. Wash rice and urad dal separately in cold water for up to 5-6 times.
2. Place them in two separate large bowls and cover with warm water overnight. In the urad dal bowl add in fenugreek seeds.
3. After the soaking period discard the soaking water, reserving about two cups.
4. Place the soaked rice and urad dal in a blender and blend to a thick paste. Add salt and mix well.
5. The consistency of the batter should be just so that it covers the back of a spoon.
6. Add a little bit of the reserved soaking water to help with the blending process.
7. Blend the batter to a degree where it's grainy – this is what's going to make your dosas crispy.
8. Place the dosa batter in an extra-large bowl. Cover loosely and ferment overnight in a warm place.

To make the dosas:

1. Heat a non-stick frying pan, take a small paper towel, dip it lightly into the oil and grease the pan.
2. Take a ladle-full of the batter and spread a larger pancake.
3. Spread the batter in a circular motion, starting from the inside swiftly.
4. When the top becomes dry, take about a ¼ tsp of oil and spread it gently over the dosa with the back of a spoon or spatula.
5. When the back of the dosa turns golden some of the potato mixture into the middle of the pancake and fold the dosa from each sides.
6. Take the dosa off the pan place on a plate and serve with coconut chutney.

I have this step by step instruction for you to use as a guide, but trust me making the dosa is one of the easiest thing to do.

For all my Indian readers, this dish must not be new to you but I am sure it is one of your favorites! For non-Indian readers, you have to try this!! SOON!

You might have some leftover dosa batter after you are done feeding 4 people. You can freeze the batter for later use or make these delicious dosa cakes or uttapam as breakfast item or tea-time snack to munch on.

ENJOY!!!

Chane ki Dal

For the past few months, I have been hardly trying to be friends with Mr. Yeast but it seems like he just doesn't like me :(... Multiple times in the past few months, I have tried to bake French Bread, Italian bread, and just a simple little bread with no success. Dear hubby wanted to try the French Bread so bad that one day he ended up buying the entire loaf for the two of us, obviously he couldn't keep waiting on me for another mistrials :)...

We got the French Bread, the entire loaf, but weren't quite sure how exactly to serve it. Hubby had it with butter once or twice but he didn't really liked it or rather he wanted something spicy instead of just bread and butter. That's when I decided to make this Chana Dal. We had it for breakfast and it was one of the best combo that we have had. This is a must try if you like french bread with something spicy with it.

Ingredients:
  1. Two cups Chana Dal - soaked in water overnight.
  2. One medium onion - thinly sliced
  3. One medium tomato - chopped
  4. One and a half tblsp red chili powder
  5. One tblsp dhaniya powder
  6. A pinch of turmeric powder
  7. One tblsp ginger-garlic paste
  8. Salt per taste
  9. Cumin seeds - Half tsp
  10. Oil - Two tblsp
  11. Lime juice - half tsp.
  12. One glass warm water

Process:
  1. In a medium sized pan, heat oil and add cumin seeds.
  2. Add in onions and let it cook till golden brown.
  3. Add in chopped tomatoes, and mix well.
  4. Let it cook till oil separates.
  5. Add in chili powder, dhaniya powder, ginger-garlic paste, salt, and turmeric powder.
  6. Mix well and let it cook till oil separates.
  7. Now, add in chana dal, mix well.
  8. Add in half a glass of water and let it cook on medium heat, stirring in between.
  9. If needed, add the remaining water and cook till the dal is done.
  10. Serve hot with French Bread.
Chane ki dal is one of my favorite lentils, you can basically just cook it with anything. Here are some more recipes related to chana dal that I have previously posted:

Banana-Kiwi-Strawberry Smoothie

So for past two weeks or so, my older brother and sis-in-law went for their first Hajj!! As exciting the experience would be for them... It was equally exciting on my part as my niece stayed with us for the entire time. You will find more details on my niece here. She is the most adorable, cutest, naughtiest, and fun-loving kid I would ever know. So her being around the house, every now and then, I try to make something with milk, so she would drink it without any tantrums :).. I made this smoothie over the weekend and I know she loved it. How? Well......

Ingredients:
  1. One banana - cut in cubes
  2. Three-four strawberries - halved
  3. One kiwi - sliced
  4. One and a half cup cold milk
  5. Sugar - about three tsp (you can adjust it according to your taste buds).
Process:
Grind together all the ingredients in a food processor. Serve cold!

Rose Milk

While growing up in India, I used to be a big time milk drinker… I never drink tea… and after coming to US I have become a big time coffee drinker… there is a reason behind this change… My paternal family comes from a military background so everyone on my paternal side are big on healthy eating and healthy drinking resulting in me and both of my siblings drinking a full cup of milk every morning before leaving for school… Tea was a big no no for us kids… to be very frank I never liked the smell of the tea…
After coming to States my love for milk started to die and my love for coffee started… the big reason was that we don’t get the fresh milk here as we used to get in India… We had hired this milk-man who had about 5-6 buffalos and would bring in fresh milk every morning home-delivered to us…
If you were in India in 1990s I am pretty sure you remember this commercial on milk… This is how it goes…
Doodh doodh doodh doodh doodh hai wonderful
Pi sakte ho roz a glassful
Garmi me dalo doodh me ice
Doodh ban gaya very nice
Piyo daily once or twice
Mil jayega tasty surprise
Doodh hai must in every season
Piyo doodh for healthy reason
Rahoge phir fit and fine
Jiyoge past ninety-nine
Doodh doodh doodh doodh doodh, wonderful doodh,
Piyo glassful
The commercial focused on all the healthy reasons to drink milk… My mom would always give me a big lecture on me not drinking milk regularly as I used to in India…
Every now and then I try to come up with some kind of drink which I can make using the milk so that I can fulfill the one cup a day rule posed by my mom at home… (Gosh… I sound like a teenager… but believe me – my mom still treats me as one :) )
So I made this Rose milk the other day to beat the heat as well as to fulfill my mom’s regulations in our household :)
Ingredients:
1. Two cups chilled milk
2. One banana – cut in cubes
3. Two tblsp rose syrup
4. Sugar per taste
Process:
Take half a cup milk and chopped banana – grind it well. Add in remaining milk, rose syrup and sugar – grind well… and serve chilled.
ENJOY!!!
