The weather has been great in our neck of woods... the Mother Nature has been very generous to us lately... and I love it...
With summer in its full swing it get hard to stand in the kitchen and keep cooking for more than half an hour and at times even that seems ages... Normally around this time of the year I try to make meals that are fast to cook and delicious at the same time....
Few days ago I made this sukhi aloo ki bhaiji along with rotis for our lunch... Quick and Easy...
Ingredients:
- Three medium potatoes - boiled and cut in cubes
- 6-7 green chilies - finely chopped
- Salt per taste
- Turmeric powder - 1/4 tsp
- Lime juice - 1 tblsp
- Oil - 4 tblsp
- Mustard seeds - 1/4 tblsp
- Cumin Seeds - 1/4 tblsp
- Curry leaves - 2 or 3.
- Heat oil in a wok.
- Add in cumin seeds, mustard seeds and curry leaves.
- Once splutter, add in boiled and cubed potatoes.
- Mix well.
- Add in green chilies, salt, turmeric powder and lime juice.
- Mix well.
- Let it cook for about 10-15 minutes, mixing once every 3 minutes.
- Serve hot with rotis.
