Egg Fried Rice


An Indo-Chinese dish is a must in our household almost every week. Dear Hubby (AG) can't get enough of it... I usually make chicken fried rice but we ran out of it so I instead made this. I personally love it with eggs instead of chicken but not everyone else in the house...

Ingredients:
  1. Two cups basmati rice - partially boiled
  2. Two eggs
  3. Half cup carrots - thinly sliced
  4. 1/4 cup corns
  5. 1/4 cup green peas
  6. One small green bell pepper - finely chopped
  7. One small onion - thinly sliced
  8. Soy sauce - 3 tblsp
  9. Salt per taste
  10. Vinegar - 1 tblsp
  11. Oil - One and a half tblsp
Process:
  1. Heat half tblsp oil in a frying pan and fry two eggs together.
  2. Cut in small pieces and keep aside.
  3. Heat 1tbsp oil in a wok.
  4. Add onions, carrots, corn and green peas.
  5. Let it cook for about 5-6 minutes - stirring every once in a while.
  6. Add partially boiled rice and green bell peppers.
  7. Add salt, soy sauce and vinegar.
  8. Mix well.
  9. Add fried egg pieces in Step#2.
  10. Mixe well and cook till the rice is fully cooked.
  11. Serve hot.

Hi AZ, the rice looks so good and I read ur other post and quite agree that the heroines today are more into skin show and the audience loves that. I agree the movies today are no more family movies.
