Guacamole Dip


Days are now longer than normal - meaning me getting hungry more than usual...

Sometimes its bad to be a foodoholic, because all you think about is food, food and food...

When I am at home, every couple of hours I start to think what can I have next. When at work, I keep thinking of all the new recipes that I want to try and some of the old recipes that I haven't tried for so long now...

However, during weekdays, I normally get home around or after 7, so it gets really hard to actually cook something that takes up an hour... and believe me I am never in a mood to do so... weekends are a different story...

One of the things that I made few weeks ago, was this delicious Guacamole Dip and added it in as one of the ingredients in a burrito...

This is dip tastes havenly and you can have it with burritos, cliantro rice (recipe coming soon), or chips... and the plus point is that it is super easy to make!!!!


Ingredients:
  1. One ripe avacado
  2. 2 tblsp onions - finely chopped
  3. 2 tblsp tomatoes - finely chopped
  4. Salt - a pinch or per taste
  5. Lime juice - half tblsp
Process:
  1. Cut the avacado in half and take out the pit.
  2. Spoon out the avacado from its shell with a spoon.
  3. Mix together with the ingredients listed above (#2 to #5).
  4. Serve with burritos or chips.

Pani Puri; Gol-Gappe; Pakodi; Pakori

Pani-Puri - ummm.. where do I start??? This was/is/will be my most favorite street food and I can have it any and every time of the day... I can never have enough of these...

These small puris - filled with mashed potatoes and black chana with loads of chaat masala - dipped in spicy water - a few drops of sweet tamarind chutney - make sure to gulp it in one try otherwise it will break down and will be pretty messy...

Back home - the best pani-puri would be the ones serve by Bhaiyas on carts (laris).. The best one I had was Mahendar Bhaiya's Pakodi center near our house in Ahmedabad... it was/is just awesome... last weekend I spoke to my sister-in-law and she said "Oh we were just thinking about you as we were over at Mehendar's Pakodi center" - I was like "Didi jale per namak chidak rahe ho" (sister, you are making me jealous)...



I am drooling as I am writing this entry... Here goes the recipe...

Ingredients
  1. Pani-puri - about 40-50 pcs (store bought - easily available at all Indian Stores)
  2. For filling: 1 large potatoe - boiled and mashed; Black chana - soaked over night and boiled; salt; chaat masala
  3. For Pani: a bunch of fresh mint leave, coriander, 2 green chilies, chaat masala, one and a half cup cold water and salt per taste
  4. For tamarind chutney: 3 tblsp tamarind pulp; 8 deseeded dates; 1/4 cup jaggery and salt per taste


Process

Filling
  1. Mix togather mashed potatoe, boiled chana, chaat masala and salt
  2. Keep aside
Pani
  1. Grind togather mint leaves, coriander and green chilies.
  2. Add into chilled water
  3. Mix in chaat masala and salt
  4. Keep aside
Tamarind Chutney
  1. Grind togather dates, tamarind pulp and jaggery - adding a little water as necessary
  2. Mix in salt per taste
  3. Keep aside


Serving Pani-puri
  1. Poke a hole in the center of the puri
  2. Add in the potatoe filling
  3. Either dip in filled puri into pani or spoon in the pani into puri
  4. Spoon in tamarind chutney - a drop or two.
  5. Hurry - put it in your mouth or it will break apart!!!
  6. Enjoy the yummy taste of all the goodness in the world!!!
Tips: Stir the pani well before dipping in the puris or spooning it into the puris as the spices tend to settle down at the bottom...

Earth Day Special & Tomato-Garlic Chutney

Sorry... It's been a long time since I have posted anything... Very busy at work with the tax filing deadline.. yes you guessed it right - I am an accountant by profession... a CPA... :)

Today is the 40th Anniversary of Earth Day!!! The newspaper, websites, and highlighted articles are all focusing on how to go green.. .how to save earth... how to contribute or give back to earth... I came across two very valuable and informative website - Earth911.com and Terracycle.net... Check them out and see how you can go green...

Also, I would like to know how you guys have been recycling.. or how green you are... different ways that you use to contribute to earth and environment... please feel free to leave your comments... I am still trying to figure out how green I am... ?!?!?!?!

Well anyways... the weather has been great in Boston... and Spring is definitely here... you can see it on the streets when you go out.. it's sunny, people are out, restaurants are full, and everyone is smiling and the trees are all colorful!!!!!! Here are some snaps that I got for you guys...

  

 


Tomato-Garlic Chutney


Ingredients
  1. Medium tomato
  2. 2 medium cloves of garlic
  3. Salt per taste
  4. Red chili powder - a pinch
  5. One tblsp oil
  6. Cumin seeds - a pinch
  7. Mustard seeds - a pinch
  8. 2 curry leaves
  9. Fresh chopped coriander
Process:
  1. Grind tomato and garlic
  2. Add in salt and red chili powder and keep aside
  3. Heat oil in a small wok
  4. Add in cumin seed, mustard seed and curry leaves
  5. Once the seeds splutter - add it to the tomato-garlic paste
  6. Garnish with coriander and serve hot or cold.
